Would anyone like a Recipe for Chocolate Mousse? Well, here is one of the best recipes I have found. In 1998, Marc Glassman printed this recipe that he had originally obtained at the “Cafe Majestic” in San Francisco. While he states, in his words, that this is a “fast, easy, and surefire crowd-pleaser”. Certainly, I have found that to be accurate. Therefore, I defy you to see if you can taste any difference from other types of mousse. Subsequently, this recipe is a chocolate lover’s delight. However, I have discovered that chocolate and a Fine Merlot are amazing together. You might like to try it for yourself.

Recipe: Chocolate Mousse: First, you want to make sure you have all of the following ingredients:

(Since this recipe was made for serving 16; you might need to adjust the amounts to meet your needs.)

¾ Cup Water

¾ Cup Sugar

¼ Cup Hazelnut Liqueur, I use Amaretto. This step is Optional

1 Pound semisweet chocolate, coarsely chopped

8 Large egg yolks (I use Jumbo), lightly beaten

½ Gallon Heavy Whipping cream

 

Recipe: Chocolate Mousse: Now here are the easy directions:

First, in a large, heavy saucepan, using low heat, stir together the water and sugar. Continuously stirring until the sugar is completely dissolved. Now increase the heat to medium-high and bring to a boil. Do this for 1 minute only. Then remove from heat. This is when you will add your liqueur, if using one.

Secondly, add the chocolate and stir. Keep stirring until the chocolate is thoroughly melted. Next, add in the egg yolks. Stirring until smooth.

Thirdly, in a large mixing bowl, beat the whipping cream on medium speed. Whip until soft peaks form. Now, a little at a time. Start adding the chocolate mixture to the whipped cream. However, you will need to “fold” this in and not whip. By using a rubber spatula, you get better results.

Recipe: Chocolate Mousse: Finally, cover the bowl and refrigerate. Since you want the mixture thoroughly chilled, for the best results. This usually takes 3 to 6 hours.
