Bread Pudding With Amaretto Sauce

Here is one of my absolute favorite desserts. Bread Pudding With Amaretto Sauce. While this recipe usually calls for a Bourbon sauce, consequently, that sauce was just too overpowering. So I developed my own sauce utilizing amaretto. Since it didn’t take too many tries; the right formula was easily reproduced. However, I have found that I need to double the sauce recipe. Due to the fact that my family tends to guzzle it down, I know that my ex-husband wanted to sell the recipe to one of our local restaurants.

Bread Pudding with Amaretto Sauce:

While this is much like any other bread pudding recipe, certainly another game changer is to cook it like a Soufflé in a water bath. Resulting in a smoother texture. Now let’s get started.

Bread Pudding With Amaretto Sauce:

Ingredients:

◊ 1 loaf of French bread cut into 1 inch cubes Let it stand in a large bowl. Covered with a towel for 12 hours to dry the bread.

◊ 5 cups of milk and 2 cups of heavy whipping cream

◊ 7 Extra Large or Jumbo Eggs, lightly beaten

◊ 1 Cup Golden or Dark Raisins

1 Cup Sugar

◊ 2 Teaspoons ground nutmeg

◊ 2 Tablespoons Ground Cinnamon

◊Optional: 1 cup of coarsely chopped walnuts.

Bread Pudding With Amaretto Sauce:

Instructions: First grease a 9x13x2 inch baking pan. Glass works best. Preheat oven to 325ºF.

Next uncover cubed French bread and place in a very large mixing bowl.

Now pour Milk and Cream mixture over bread cubes. Then add the lightly beaten eggs. Gently blend thoroughly. Next add the raisins and walnuts. Fold in gently.

Now in a small bowl combine mix the Sugar, Nutmeg, & Cinnamon.

Spoon ½ of the bread mixture into greased baking dish. Sprinkle ½ of the Sugar mixture over the top of the bread. Now repeat the process using all of the bread. By utilizing a slotted spoon for the last half there will be excess liquid. This can be tossed.

Now place the baking dish into a ¼ inch water bath. Then bake covered lightly with foil for 40 minutes. Next remove foil and cook another 15 minutes or until a toothpick inserted comes out clean. Certainly the pudding should be nicely browned and firmly set.

Ingredients:

While your pudding is cooking. This is a good time to make the Amaretto Sauce.

Ingredients: 4 Sticks of Butter (1 Cup).

2 Cups of Confectioners’ Sugar

1 Extra Large or Jumbo Egg

½ of a ¼ Measuring Cup of Amaretto

Fill the rest of the ¼ Measuring Cup with equal amounts of Quality Vanilla Extract & Almond Extract.

Instructions: First melt butter in saucepan over low heat. Then∴Gradually∴sift in the confectioners sugar into the butter. Do not add more sugar until the previous mixture is thoroughly dissolved. Stirring constantly until all of the sugar has been combined with the butter. Now add the egg and stir. Finally remove from heat and add the Amaretto/ Vanilla Extract/ Almond Extract into the mixture stirring thoroughly. While the sauce can be served over Bread Pudding either hot or cold. There is also the option to have the pudding itself server either warm or cold.

This recipe for Bread Pudding With Amaretto Sauce; has won over many “non” bread pudding eaters. There might be many reasons for this change in opinion. However, my personal feeling is the Soufflé texture and the subtle taste of the Amaretto sauce. Subsequently, changes the image of bread pudding. Certainly combined with the Amaretto Super Sauce; traditional Bourbon sauce dislikers might change their minds. Moreover while looking like a chore to make. This is a really easy recipe.
