Lobster Crepes With Maple Whipped Yams

I chose Lobster Crepes with Maple Whipped Yams as my dessert to make. Firstly, I absolutely love lobster. Secondly, I added some cloves to the maple whipped yams the last time I made them, and they tasted like pumpkin pie filling. Therefore, like a pumpkin pie lover, I put these two together, and what an amazing taste they were. I paired this with our Moonlight Sonata Wine.

Crepes:

2 large eggs

¾ cup all-purpose flour

1 bunch of chives, finely diced (or green onions for stronger flavor)

2 tablespoons salted butter, melted

A pinch of salt, Kosher, or pink Himalayan is what I use.

1 cup of milk

Lobster Filling:

Lobster Crepes Deserve The Best Filling:

1 Live Maine lobster (Or favorite from Local seafood Stores)

                Steamed and meat removed

2 tablespoons unsalted butter

1 ½ teaspoon light brown sugar

¼ cup of white wine (I used Freedom Chardonnay)

1 shallot, finely diced

Pinch of Salt & Pepper

Maple Whipped Yams:

Lobster Crepes Mixed With These Maple Whipped Yams Was Sweet & Delicious:

3 same-sized yams, boiled and peeled.

3 tablespoons of salted butter

⅓ cup of genuine Vermont Maple Syrup (No Log Cabin or Mrs. Butterworth’s Please)

Pinch of ground cloves

⅓ cup of sour cream

Salt & Pepper to taste

Directions:

Lobster Crepes With Maple Whipped Yams

Once I have each ingredient ready to go, I start cooking the crepes. In a medium, lightweight frying pan I melt a tad of butter. While swishing the pan I coat the bottom with the melted butter. Then I take a small ladle of the crepe dough and pour it into the frying pan while tilting and turning the pan to evenly coat the bottom. Return the pan to your heat source and allow to cook until the dough on the upper side is no longer in a liquid state and the edges are lightly browned. Carefully flip the crepe to cook the other side for about 2 minutes. 

Remove from the frying pan and place on a plate. Add the fillings into the middle from one end to the other. Now bring each side over the filling and add a dollop to the top. Can garnish with fresh or dried dill weed, green onion tops in thin strips, or chives.

Serve immediately!

This is an easy recipe that will feel luxurious to your guests or family. By adding the Maple Whipped Yams. Which adds a soft sweetness to the sweet and tender Lobster. Yet this filling can also be used as a side dish. Simply make without the cloves and you get a heartier flavor. Certainly, I have been known to substitute the Sour Cream with Whipping Cream. This adds a lightness when pre whipped. Or an added boldness when using heavy whipping cream unwhipped. However, you choose to serve these delicious yams they will quickly become a family favorite. Another plus is that your children or grandchildren will love them.
