Moist Cranberry Bread Recipe Has Been A Holiday Favorite

My mother’s Moist Cranberry Bread Recipe Has Been A Holiday Favorite in our family for decades. I can remember her cooking for weeks. Certainly, everyone who received some of her bread always knew it was baked with loving care. Moreover, she used fresh ingredients. Along with the best of the best other ingredients. For example, she always used high-quality butter. Then there were the golden raisins. The nuts used in each recipe were ones she cracked. For years, I watched as she sliced each cranberry in half.

Ingredients:

  • Use 4 cups All-purpose flour,
  • 1 teaspoon salt,
  • 1 teaspoon baking soda,
  • 3 teaspoons baking powder
  • Now add 2 cups granulated sugar.
  • 2 Jumbo eggs, well beaten,
  • 1 cup fresh orange juice,
  • 4 tablespoons of butter.
  • Next, you will need 4 tablespoons of hot water.
  • 2 cups of fresh cranberries, sliced in half,
  • 1 cup golden raisins
  • Finally, as an option, add 1 cup chopped nuts (walnuts were her preference).

Next, preheat the oven to 350°F. Then prepare the three loaf pans. By lightly buttering the bottom and sides. Make sure the corners are adequately covered. Finally, coat the pans with flour. Now tap out the excess flour.

Instructions:

In a very large bowl, mix all of the ingredients. However, take care not to overmix. Since we all know that overworked dough doesn’t rise well, once all ingredients are well blended, begin spooning dough into bread pans. Next, place it in the oven for 1 hour. Now I rotate the pans at the 30-minute mark. Finally, the bread is finished when a toothpick inserted comes out clean. After that, remove it from the oven and allow it to cool. May be served warm or cold. There are some who prefer icing.
