Genuine Home Fried Potatoes

My recipe for Genuine Home-Fried Potatoes, while they are a favorite at our home with almost anything, certainly we prefer them with Wiener Schnitzel and Blau Kraut. Of course, I have made them with sausages and creamed spinach. My kids liked them with hamburgers. Now they are also great the next morning with a fried egg.

Genuine Home-Fried Potatoes Ingredients:

  • → 4 or 5 Baking Potatoes (I prefer the white Yukons)
  • → 1 Medium Yellow Onion: finely diced
  • → Bacon Grease or Butter
  • → Salt, Pepper, and Garlic to taste.

Genuine Home Fried Potatoes Directions:

◊First, Place Unpeeled Potatoes in Large Pot. Cover with water. Then boil until a knife moves easily through the center of the largest potato.

◊ Next, drain the water and place the potatoes on wax paper or foil. Cool to room temperature.

Now, peel and finely dice the onion.

◊ Once potatoes are cool, use paring knife and remove the skins.

◊ Heat Bacon Grease in Large Skillet on Medium High.

Once the grease is fully heated, put the onions in and saturate quickly. If using fresh garlic, put it in with the onions. Now take the peeled potato and slice it by hand into chunks over grease. Next, salt and pepper lightly between potatoes, and turn them over to prevent burning. Certainly, once all the potatoes have been sliced and are in the skillet, make sure that the skillet is not too dry. Next, add bacon grease sparingly while frying. Since potatoes will soak up the grease. However, you do not want greasy potatoes. Once in a while, I will add a little dry white wine to these potatoes. Of course, I pick mine from my DTC Ambassadors collection.  Now salt and pepper to taste. Finally, serve hot.
