Amazing Chicken & Dumplings

Here is the most Amazing Chicken & Dumplings recipe. While I love to cook, cooking does not always love me. Due to the many illnesses and injuries, cooking can be daunting. Of course, I found that using a pressure cooker lessened my time on my feet. Yet finding recipes was a challenge. Now I know there are many places on the internet to find great recipes. However, in order to use them, you need to know in advance what you want to cook. Since I have such a sensitive stomach, I usually go through recipes to find out what food I “feel” like eating. Consequently, I will go through several cookbooks to fulfill my cravings. To sum it up, I have found a great cookbook for my pressure cooker.

Amazing Chicken & Dumplings: With this recipe, you can choose which parts of the chicken you like to use. Or use the whole chicken. While I only like dark meat, here are the ingredients:

  1.  4 Tablespoons Butter
  2. 2 pounds of chicken (I used chicken thighs and drumsticks with skin and bones).
  3. 1 diced yellow onion
  4.  6 Cups chicken stock ( I used a combination of 1 tablespoon vegetable “Better Than Bouillon” and 3 tablespoons chicken “Better Than Bouillon”). This is a heavier concentration than the jar instructions.
  5.  4 Washed and thinly sliced ribs of Celery
  6.  2 1/2 Cups of baby carrots
  7.  1 Teaspoon dried Thyme
  8.  3/4 Teaspoons Poultry Seasoning
  9.  1/2 Teaspoon Sage
  10.  2 Cups Frozen Corn Kernels (room temperature)
  11.  1/2 Cup Heavy Cream
  12. 1/4 cup dry white wine (I used a Sauvignon Blanc from my wine of the month club). DTC Ambassador!

1. Heat butter on medium-high until melted and sizzling.

2. Salt and pepper chicken while butter is melting. Then place the chicken in butter and sear on all sides. While this usually takes only 5 minutes, some cooking times may vary.

3. Next, add the onion, chicken stock, celery, carrots, thyme, poultry seasoning, and wine. Securely lock the lid and cook for 8 minutes on HIGH.

4. Lower the heat to simmer. Perform a quick release of the cooker’s pressure.

5. Remove the chicken and take off the skin, then debone. (If you kept them on during the cooking cycle.) Now add in the corn and simmer while you are making the dumpling dough.

Dumpling Ingredients:

  1. 3 Cups of Bisquick baking mix
  2. 1 Cup of cold Milk
  3. 1/3 Cup of grated Parmesan Cheese

Mix the ingredients until a soft dough forms. ** Do Not Overmix** Let it sit for a few minutes to allow it to rise. Place spoonfuls of the batter into the boiling chicken mixture. Cook uncovered for 10 minutes, then covered for 10 minutes. When dumplings are finished cooking. I add the Heavy Cream using a unique whisk that does not disturb the dumplings.
