My mother had the best Easy Carrot Cake Recipe. Since she knew how much our family loved this cake, she gave me the recipe before she passed. While I have shared it with my family. Now I want to share it with you. When you make this, you have the option to bake it in a loaf pan, as a cake, or as a bundt cake. Now I prefer the loaf style. Therefore, I do not add any icing. Certainly, this keeps the calories down.

Easy Carrot Cake Recipe: This recipe calls for grated carrots. However, using a food processor will naturally make the grating easier. Without further ado, here are the ingredients:

First, 2 ²⁄ ³ cups of water

Second, 2 ²⁄ ³ cups of sugar

Third, 2 cups of grated carrots

Fourth, 2 teaspoons of cinnamon

Next, 2 teaspoons of allspice

Finally, 1 teaspoon of cloves

For cooking, You Will need 2 tablespoons of oil (preferably MCT, or multi-chain triglyceride)

Also Needed Are- 2 Cups of Raisins ( I prefer Golden Raisins) 

Now add- 1 Teaspoon of Salt

Easy Carrot Cake Recipe: Here are the cooking instructions

Boil all of the Above Ingredients for 5 to 10 minutes. Then allow cooling.

Once the mixture has cooled. Then add 4 Cups of Flour. With 4 Teaspoons of Baking Soda. Now you can add 1 Cup of Chopped Nuts (Optional).

Preheat Oven to 325°F. Next Butter and Flour preferred cake pan. Bake in the oven for about 1 hour. Otherwise, until a toothpick inserted in the middle comes out clean.

Anyone that remembers growing up; in a home when something was always baking. Certainly knows what I am talking about. When I say that the smell fills the entire house.
